I promised you healthy, right?!

After weeks of recipes involving sweets I thought I would deliver something that was actually good for you and delicious.

Eggs are a big staple in our home. After having our own chickens for a couple of years we became very creative with different ways to eat them. These are called breakfast tacos but really we have eaten them for breakfast, lunch, and dinner. This is a quick meal to make and because of all the protein it is nice and filling.

|Ingredients|

Black Bean and Egg Breakfast Tacos

1 Egg

1/2 Cup Black Beans

2 Corn Tortillas

1/2 Sliced Avocado

1/2 Teaspoon Chopped Cilantro

Sprinkle of Cojita Cheese

Slice of Lime

Black Bean and Egg Breakfast Tacos

Melt a pat of butter in a saucepan, set on medium low cook egg over medium. While egg is cooking prepare all your vegetables and cheese for taco. After egg is cooled remove from pan quickly warm your tortillas so they wont crack while you are eating. Remove tortillas from pan. Add beans to pan and quickly warm. Assemble tacos. Place egg on tortilla then add beans. Top tacos with sliced avocado, cilantro, cheese, and a squeeze of fresh lime juice. Enjoy immediately. Serves one.
