Longest title ever for a cookie, yeah?!

I just couldn’t decide, each description of the cookie holds its own on making it taste so good.

Browned butter.

This creates a rich nutty delicious flavor in the cookie, not to mention the melted butter added to the dough creates a chewy yet soft cookie.


Give to me anything and everything coconut. Whoever first cut open that hard shell of a tree nut one day in the tropics is my greatest friend.

Chocolate chips.

I mean really, does this even need a reason to be in the title.

This past weekend I had a rare break with just the little two, and the littlest was actually napping. So sister and I did what we do best, we baked. And because most of my baking sessions are spur of the moment I have come to love this chocolate chip cookie recipe. It calls for melted butter instead of softened. Who has time to soften the butter anyways? The browned butter happened by accident, I had been warming my pan to melt the butter and got distracted, so the second I dropped the butter in it was browned. It was the last of my butter so I went with it, and I am so glad that I did. I of course had sweetened coconut to add so I threw that in too.

I think that’s the beauty with recipes, and baking and cooking in general. You follow a recipe a couple times, learning the ratios you need, the leveling agents, the salt, the amount of wet and dry ingredients, and then over time you become confident and make that recipe your own. You veer of course and add things that speak to your palate, things that you love and take away the things you can do without.

So, please, enjoy my cookie recipe, full of my favorite things, and get to know me a little better.

|Brown Butter Coconut Chocolate Chip Cookies|


1 1/2 Sticks Butter melted and browned

1 1/4 Cup Brown Sugar

1 Egg plus 1 Egg Yolk

1 Tablespoon Vanilla Extract

2 Cups Flour

1/2 Teaspoon Baking Soda

1/2 Teaspoon Salt

1/2 Cup Shredded Sweetened Coconut

1 Cup Semi Sweet Chocolate Chips

Preheat oven to 325 degrees. Prepare baking pans with parchment paper. Heat a small skillet over medium high heat and add butter. Cook until browned. Set aside to cool while you sift and combine your dry ingredients. In a stand mixer combine your butter and sugar. Mix well then add in egg and egg yolk. Combine completely and add in vanilla. Slowly add in dry ingredients and mix until just combined. Stir in coconut and chocolate chips.

Using a cookie scoop or a large spoon scoop out about two tablespoons of dough. Form a ball and gently pull apart two pieces. Place each cookie on cookie sheet with torn edges on top. This helps for a more natural looking cookie.

Bake until lightly browned but center is still soft.

Makes about two dozen cookies.
