I have posted quite a few Mexican themed recipes over the past couple of months. Honestly, Mexican food is a favorite of mine, and any time we have company over that is usually what we make. I wanted to compile all of those recipes in one spot for you all. One, so you can drool over them like I am right now, and two, because I have caught a nasty horrible end of the season flu that I can’t seem to shake. So, scrambled eggs have been the extent of my cooking this week. My poor children are surviving off of cereal and cliff bars. It’s all good, I promise to be back next week with a delicious original recipe for y’all. Until then, make up some or all of these recipes, and enjoy!
This truly is the best, ever, friends. Guacamole is a beautiful thing, really, it can take tacos over the top or can be served as a meal all on its own. Pair this with your favorite beer, or margaritas, and it is all you will need.
This dish is simple, a little out of the ordinary, and seriously bursting with flavor. If you need something fast to make for dinner that will please a crowd this pasta definitely is it.
This meal is on regular rotation in our home. I almost always grab a rotisserie chicken when I am at Costco just so I can make this quick and delicious meal. Pair it with the guacamole and it will be even better.
Eggs and beans, beans and eggs, seriously nothing is better. These can be amazing served for breakfast or dinner.
This delicious Salsa deserves a new photo shoot. This was one of my first recipes I shared with you all, and it is by far my favorite. I make this for every family function, and it is easy, and delicious.
