I have a few vices. Well, I’m sure if I were being totally honest it would be more than a few. But, my favorites are, coffee, chocolate, and coconut. Really, nothing beats those three things.
One day during a particularly amazing afternoon (all kids napping at the same time, amazing right?!) I decided to combine all three of those things. The most amazing frappe was born. Now, I must disclose this information. This is a treat. If I drank this daily I would be so hyped up on coffee and sweets that I would probably lose my mind a little and my waist. But, it beats the $6 Frappuccino that’s for sure.
Coconut Mocha Frappe
2 Cups Iced Coffee Concentrate
1 Cup Ice
2-3 Tablespoons Crème of Coconut*
Squeeze of Chocolate Syrup plus more for garnish
Splash of Half and Half
Add iced coffee concentrate, ice, crème of coconut, chocolate syrup, and half and half to blender. Blend until smooth. Drizzle chocolate syrup inside of glass then pour frappe. Top with homemade whipped cream and drizzle of chocolate syrup. Enjoy immediately. Serves two.
*Crème of Coconut is different than coconut milk. This is a syrup like consistency and has added sugar. The amount added is per your preference as this is used as your sweetener.
Homemade Whipped Cream
1 Small Container Heavy Whipping Cream
1 Tablespoon Vanilla Extract
3 Tablespoons Powdered Sugar
Add all the ingredients to your mixer and whip until soft peaks are formed. Store in an airtight container in the refrigerator.
