I have always tried to eat healthy.
Sometimes I do better than others, and this past month or so has been one of those times.
I think the key to eating well is being prepared. When I don’t have a plan of what I am going to eat for breakfast or lunch I’ll usually just grab what is easy and what will fill me up. But if I shop intentionally and map out meal ideas (I am not a good list maker, in fact I loathe list making (weird I know)).
So usually because of convenience my breakfast/lunch involves some sort of egg dish, and if I had my way I would always have every one of these ingredients and I would make my eggs this way every single time.
Eggs tell a lot about a person, yeah?
We each like them a different way, some over easy, some poached, some scrambled. Some day I will delve into the meaning behind the egg and the personality of a person. HA. Yea, they tell that much about a person, seriously.
Well, I am a fan of over easy eggs. I dislike scrambled, and I can’t have my whites runny. High maintenance I know. So, over easy is perfect. Cook them until they are pretty much done, flip the eggs over, turn off the heat, grab your plate, and they are done to perfection.
The key to this recipe is dicing your vegetables small, then they cook faster, and you eat faster. And everyone wants to eat faster, am I right?
So, enjoy a little piece of me this morning, and of course, cook your eggs your way.
Eggs, my way.
1 Cup of Spinach
1/2 Red Bell Pepper diced
1/4 Onion diced
Red Pepper Flakes
Eggs, my way.
In a medium skillet melt a pad of butter over medium heat. Add diced vegetables. Season with garlic salt and pepper. Cook until fragrant and soft. Add in spinach. Cook until wilted. Set aside.
In the same skillet add another small pad of butter. Allow to melt and get hot before cracking your two eggs. Season eggs with garlic salt and pepper. Cook until eggs are mostly done.
Once egg white are mostly cooked turn heat off and carefully flip eggs over, try really hard not to break the yolks. Prepare your plate and then place eggs on top of veggies. Sprinkle with feta cheese and red pepper flakes. Enjoy immediately.
