Well our home has been bombed with the flu germ. I mean bombed. Kids are dropping like flies, and I am hanging on with all my strength. By the way, thank you so much for all of the prayers and well wishes. My sweet second born is slowly but surely getting better, and we are blessed to be surrounded by lots of family that don’t mind sacrificing their own health by helping us out with the kids. I make my way back and forth from the hospital, but with a baby who only nurses, and doesn’t really like anyone else (sorry grandmas) I find that I am most needed at home. With that being said, I cooked up these delicious grilled cheese sandwiches last week when my oldest had first gotten hit with the bug.

Nothing speaks greater love than a warm grilled cheese sandwich when your sick. It warms you from the inside out. I used my delicious trick of spreading cream cheese on the inside but added a little red pepper for a nice twist on an old standby. Enjoy friends, and please, stay healthy.

Grilled Cheese Sandwich with Roasted Red Peppers

|Ingredients|

Sliced Bread (Gluten Free in our case but a sliced French loaf would be delicious)

Mozzarella Cheese (Thickly Sliced)

1 Block of Cream Cheese (Softened to room temperature)

Roasted Red Pepper Chopped (1-2 depending on size)

Few Sprigs of Fresh Basil Chopped

|Directions|

Heat a skillet with a couple tablespoons butter. While butter is melting assemble sandwiches. In a small bowl add chopped red peppers and cream cheese, stir until well combined. Spread butter on one side of each slice of bread. On the other side of one slice spread a generous amount of red pepper cream cheese. Sprinkle good amount of fresh basil and top with two slices of mozzarella cheese. Top with the other slice of bread and cook in skillet until lightly browned and cheese is melted. Enjoy with a warm cup of soup or on its own, its delicious either way.
