Oh friends, this dessert is by far our families favorite.
Its fresh, simple, not too sweet, and because of the fresh ingredients you don’t feel too bad about indulging.
I had some leftover shortbread cookies from wild ones birthday party so I whipped this treat up in no time. Sugar cookies are also perfect in place of the shortbread ones and I am sure Oreo’s would be divine, so just use whatever cookie you have on hand. (Unless of course you’re like me and cookies are your weakness and you rarely have any just hanging around.) Well then, in that case, make up a special batch just for this dessert, it’s totally worth it and you can thank me later.

Strawberry shortbread Parfait
Strawberries washed and sliced
Shortbread Cookies (recipe here just scroll to the bottom to see it)
1 Small Carton Heavy Whipping Cream
Sprinkle Powdered Sugar
1 Teaspoon Vanilla Extract
1 Container Vanilla Flavored Greek Yogurt
Add heavy cream, powdered sugar, and vanilla extract to a mixer and beat on high until stiff peaks are formed. Add greek yogurt and fold in lightly until fully combined.
Strawberry Shortbread Parfait
Drizzle a small amount of chocolate sauce in the bottom of a glass. Crumble in a small amount of shortbread cookie. Add a layer of strawberries and then whipped cream. Continue layering until glass is full. Serve immediately or store covered in refrigerator.
